BLUE MANNA BISTRO

We are excited to give a shout out to one of our favourite Restaurants and another valued partner in our Luxury Breaks South West 1st Birthday Giveway. The lucky Winner of our competition will enjoy in addition to the fabulous accommodation at The Beach Club; 2 bottles of renowned Amelia Park wines & gourmet Come.Graze.Southwest grazing board on arrival; and  a $100 voucher for lunch or dinner at the renowned and award winning Blue Manna Bistro.

Blue Manna Bistro showcases a chic minimalist interior with the open kitchen a focal point of this space.  It can be quite the spectacle when the Chefs flame up the grill.  We often enjoy a meal up at the pass where you can really see the maestros at work,  appreciate the beautiful seafood that features in many of the dishes and the artful presentation.   The inside dining area merges seamlessly with the covered outdoor dining space which extends further to the decked alfresco.  On the edge of beautiful bush reserve and creek - it is certainly the most delightful setting during the spring / summer months and on those fabulous balmy nights.

Seafood Degustations,  other specialty seafood & wine paring nights,  and events like Melbourne Cup have become the most coveted tickets in town and Blue Manna Bistro is always a favoured option for a romantic dinner or special celebration.

With a menu full of sustainably and locally sourced seafood, picking your favourite item or dish will be almost impossible! From the incredible Sashimi plates; to  the delectable Shark Bay Scallop & Prawn Pot Stickers and signature Balinese Betutu Duck or Western Australian Crayfish dishes; you’ll be a devotee after the first visit.  There is a great range of beverages for perfect pairing -  and who can go past their signature Chilli Margarita?!

We would love to introduce you to the creator / master chef who has invented sensational and award winning dishes using top quality seafood with an Asian twist – the multiple award winning chef and restauranteur, Coby Cockburn. Winner of 2022 WA Restaurant & Catering Award for Best Seafood Restaurant; 2021 Gold Plate Award for Best Seafood Restaurant in Australia; 2021 WA Seafood Industry Award for Best Seafood Restaurant in WA; 2019 Gold Plate Award for Best Seafood Restaurant in Australia.

What inspired you to become a Chef and specialise in cooking with Seafood?

I have always enjoyed food and cooking. Seafood just seemed a natural progression after growing up on the beach in Far North Queensland fishing, hunting and gathering an abundance fresh seafood

What are your favourites on the current menu and why?

My favourite dishes on the menu at moment would have to be the New Season Scampi tails and the Scallop pot stickers. Both dishes are light, fresh and full of flavour. Not only do I enjoy eating them I really enjoy cooking them

Who / what has been your greatest inspiration on your cooking / restauranteur journey?

Thomas Keller, Martin Boetz, Christine Mansfeild are a few of my favourite chefs that continue to inspire me. But I would have to say the biggest inspiration would have to come from sitting down and having a beer with our fishermen and seafood suppliers and growers. At Blue Manna we take the whole catch weather its Dhufish, Harliquin to Deepsea leather jackets and what better way to learn new things then straight from the people that live seafood everyday.
